Production Details The wine underwent four days of cold pre-fermentation maceration followed by 17 days of alcoholic fermentation at 30–32°C, for 21 days total in steel with the skins. Daily pumpovers and the traditional submerged-cap method were used. Malolactic fermentation occurred in barriques, followed by 32 months total maturation in barriques and large oak casks. The wine was bottled unfiltered. Reported dry extract was 32.8 g/L; vines were Guyot-trained at 4,600 plants per hectare.
