Production Details Organically cultivated since 2010, with manual selection in the vineyard and cellar, gentle destemming and pressing, and manual destemming in the best vintages. Fermentation and maceration last approximately 25 days at approximately 28°C, followed by malolactic fermentation in December. The wine matures for approximately 30 months in 20-hL French-oak casks, is bottled at the end of summer, and receives one further year of bottle maturation before release.
Tasting Notes Ruby tending toward garnet; intense rose and violet, damp earth and ripe red fruit; very persistent yet soft tannins.
