Production Details Grapes were hand-picked into 15 kg cases, sorted on two tables before and after destemming, and gently crushed. Each variety and parcel was vinified separately. Alcoholic fermentation ran for one week at 26–30°C in stainless-steel and concrete tanks, followed by approximately 15 days of maceration and approximately three weeks total in tank. Malolactic fermentation occurred mainly in barriques comprising 70% new and 30% second-passage oak. The wine remained in barriques for approximately 18 months: blending followed the first 12 months, after which it returned to barriques for another six months. It then remained in bottle for 12 months before release. The specialist vendor recommends serving at 18–20°C.
