Each variety and parcel was vinified separately. Alcoholic fermentation occurred at 26–30°C for one week in stainless-steel and concrete vessels, followed by approximately 15 days of maceration and approximately three weeks total vat time. Malolactic fermentation occurred mainly in oak barriques, 70% new and 30% second-fill. Maturation lasted approximately 18 months in barriques under temperature-controlled cellar conditions: blending followed the first 12 months, after which the wine returned to barriques for another six months. It remained in bottle for 12 months before release.
Tasting Notes Deep, vivid ruby red; ripe black fruit, blueberry, blackberry, toasted almond, cocoa and Mediterranean scrub; dense and enveloping yet velvety and delicate, with silky tannins, savouriness and a very persistent finish
