Production Details Destemmed must rested for one day in 40 hL oak vats before an initial pump-over lasting approximately 3–5 hours. After spontaneous fermentation began, further pump-overs continued for 16–17 days; no selected yeasts, nutrient salts, inocula or temperature control were used. The wine was racked while 6–10 g/L sugar remained and malic conversion was unfinished; skins were pressed at 350 atmospheres in vertical presses and the pressed juice was returned. Maturation comprised 58 months in 25-quintal oak casks and 10 months in bottle. For the specifically listed 1.5 L release, Superiore.de identifies cask no.
Tasting Notes The producer's 2020 vintage description presents the wine as structured and characterful yet delicate, subtle, deep and elegant, combining power with grace, balance and depth.
Food Pairing Red meat, grilled foods, mature cheese, pizza or baked pasta, and game
