Fermentation Vessels Stainless-steel vats
Production Details Fruit came from the oldest portion of the Scarrone vineyard at Castiglione Falletto, planted at 4,300 vines per hectare. Naturally low production from the old vines was reduced further through strict grape selection. Winemaking used pre-fermentation cold maceration, approximately two weeks of alcoholic fermentation in steel vats with punch-downs, délestage and pump-overs, followed by post-fermentation maceration on the skins. The wine was then racked and transferred to barriques for malolactic fermentation and matured for approximately 18 months among barriques, cask and steel.

Tasting Notes Ruby red; intense ripe red and black cherry aromas, vanilla and spice; fresh acidity.

Production Details Fruit came from the oldest part of the Scarrone vineyard at Castiglione Falletto, planted at approximately 4,300 vines per hectare. Winemaking used pre-fermentation cold maceration, approximately two weeks of alcoholic fermentation in open steel vats with mechanical punch-downs and pump-overs, followed by post-fermentation maceration on the skins. The racked wine underwent malolactic fermentation in barriques and matured for approximately 18 months among steel, barriques and barrels.

Production Details The Scarrone parcel covered slightly more than one hectare and had vines more than 90 years old at 4,300 vines per hectare. Strict selection further reduced the naturally low production to approximately 25 hL of wine per hectare. Cold maceration preceded a 16-day alcoholic fermentation in steel vats at 26–30°C with pneumo-mechanical cap breaking and rack-and-return. The wine then remained on its skins for seven additional days, spent eight months in barrels for malolactic fermentation and a further ten months in a 31 hL oak cask. Total dry extract was reported as 28.0 g/L.
Tasting Notes Ripe, intense black fruit; long, complex and rich.
