Production Details Barolo DOCG Albe from the current vintage is used as the base. The finished formulation is 85% Barolo Albe and 15% hydro-alcoholic extracts of about thirty aromatic and medicinal herbs, peels and roots, including Cinchona Calisaya; organic Sicilian orange peel, spices and brown sugar complete the recipe. The producer describes Barolo Chinato as a flavoured wine rather than a fortified wine, explaining that much of its alcohol and sweetness derives from the alcohol-based infusions and added sugar. Liberty Wines describes a 20-day maceration at 30°C, followed by addition of pure grape spirit and maturation in traditional oak botti for at least two years. The importer's spirit-addition wording is retained separately because it differs from the producer's 'not fortified' characterization.
Tasting Notes Intense ruby red; roses, ripe cherries, fresh mountain herbs and orange zest; bittersweet and persistent
Food Pairing Dark chocolate; the producer also suggests serving it as a digestif or aperitif
