Production Details Each vineyard was vinified separately. Grapes were destemmed and lightly crushed; the must was protected with CO2 for approximately one day of gentle warm maceration. Indigenous-yeast alcoholic fermentation began 24–36 hours later; gentle maceration in upright open-top steel tanks lasted 9–15 days and alcoholic fermentation lasted 28–30 days. Malolactic fermentation followed in 500 L French-oak casks. The wine matured for 24 months in those casks and 18 months in bottle before its original September 2020 release. The Sibi et Paucis allocation then remained under producer-cellar conditions for a further six years.
Tasting Notes Wild cherry, liquorice, underbrush, violet, rose and abundant red fruit; sweet but firm tannins, pronounced acidity, powerful structure and a very long finish.
Food Pairing Braised short rib, roasted lamb, wild boar, aged Parmigiano-Reggiano and truffle dishes
