Production Details The Guyot-trained Nebbiolo was harvested last, once ripe and with softer tannins. Fermentation with 15 days of maceration in casks was followed immediately by malolactic fermentation. From the end of winter, maturation was divided between 50-hL barrels and old barrels; the sheet states a three-year maturation period. Bottling took place in summer. Recommended serving temperature was 16–18 °C.
Tasting Notes Delicate garnet red; aromas of spices, violet, cocoa and truffles; remarkable tannins that soften with ageing.
Food Pairing Tender red meats
