Production Details Fermentation lasts ten days in large wooden casks using an indigenous-yeast pied de cuve, followed by submerged-cap maceration lasting 80–90 days. The wine normally matures for five years in large neutral French botti before release; the producer’s category page separately says its Vecchie Viti wines average five years across wood and cement.
