Production Details Grapes are harvested and selected manually, then destemmed and slowly fermented at controlled temperature with gentle must agitation in stainless steel tanks. Malolactic fermentation follows, with maturation for 7–8 months in large wooden barrels. The vineyards are situated at 300–600 m elevation on slopes stated as 20–50%. Recommended serving temperature is 12–14°C. The producer's general 2025 vintage account says its harvest began at the end of August, but does not provide this wine's exact picking date.
Tasting Notes Deep ruby red; black elderberry and cherry aromas with bitter almond and violet; fruit-led, soft and elegant palate with balanced acidity, low tannins and an agreeable finish.
Food Pairing Cured meats such as speck and Bündnerfleisch; venison carne salada with preserved mushrooms and cream-cheese mousse; cold beef with vinaigrette; tagliatelle with salsiccia; or boiled beef with salsa verde and parsley potatoes.
