Production Details Current 2019 release specification: hillside vineyards at Sant’Ambrogio di Valpolicella, average elevation 300–350 m; Guyot training at about 5,000 vines/ha and 6–7 buds per vine; stated yield 80 quintals/ha. Grapes are harvested and sorted manually into 5 kg crates, dried for about four months in dry, well-ventilated lofts, and pressed in January. Slow fermentation proceeds for 15–20 days on the skins. Maturation is about five years in large Slavonian-oak casks followed by at least one year in bottle.
Tasting Notes Deep ruby tending toward garnet; mature, expansive aromas of cherries in spirit, dried plum, figs, tobacco, leather, sweet spices, liquorice and balsamic nuances. Full, deep and balanced, with soft tannins, integrated alcoholic warmth, freshness, and a long harmonious finish recalling ripe fruit and spices.
Food Pairing Roast game, grilled red meat and mature cheeses; also suitable as a meditation wine
