Production Details The Vaio Armaron vineyard is at 230–265 metres above sea level. For appassimento, selected bunches are placed on bamboo racks in naturally ventilated estate lofts at the end of September or beginning of October; by mid-February they have lost 35–40% of their weight. Only Corvina is affected by noble rot. The dried grapes are partially destemmed and gently pressed, then ferment for 48 days in large Slavonian oak barrels at low natural temperatures; fermentation continues to dryness and malolactic fermentation follows. Maturation comprises three years in 6–20 hL Slavonian oak barrels, four months in cherry-wood casks and at least five months in bottle. Finished-wine dry extract is 40.5 g/L.
Tasting Notes Deep, nearly impenetrable ruby red; elegant, intense aromas of berry fruit preserved in spirit, dried plums and cocoa; full-bodied, balanced and firmly structured, with silky tannins and a long finish of ripe cherries and sweet spices.
Food Pairing Red meats, game, quail, roasts, richly flavored dishes and strong cheeses such as Parmesan or Pecorino; also suitable as an after-dinner wine.
