Production Details The Vaio Masi vineyard lies at 370–400 m. Grapes harvested on 5 October 1999 were dried on bamboo racks in the Torbe drying loft until 7 February 2000. After crushing and destemming, the must entered a single stainless-steel tank at 5°C for seven days of cold maceration; alcoholic fermentation ended on 10 March 2000. After pressing, the wine settled in steel until 25 May 2000 with two intermediate rackings and verification of completed malolactic fermentation. It matured in new 600 L French-oak casks from 6 June 2000 to 15 October 2003, then remained in full, nitrogen-saturated steel tanks until bottling in January 2024. Pre-bottling dry extract was 38.90 g/L.
