Production Details The Mazzano vineyard in Negrar lies at 350–415 m above sea level on terraces supported by dry-stone walls. Selected bunches were placed on bamboo racks in naturally ventilated vineyard lofts at the end of September or beginning of October; by mid-February they had lost 35–40% of their weight, while botrytis was usually very limited or practically absent. After delicate pressing, fermentation lasted about 45 days at low natural temperatures in large Slavonian oak barrels, followed by complete sugar conversion and malolactic fermentation. Maturation comprised 3 years in first-, second- and third-year-of-use 600 L Allier and Slavonian oak barrels, followed by at least 6 months in bottle. The hot, dry 2012 summer reduced grape quantity by 10% relative to expectation, while producing small, healthy berries considered suitable for appassimento.
Tasting Notes Deep, impenetrable ruby red; complex aromas of baked fruit, fruit preserved in spirit, cloves, cinnamon and coffee beans; dry and firm palate with smooth, silky tannins, integrated alcohol and refreshing acidity; long, dry finish with preserved fruit and spices.
Food Pairing Red meats, game, quail and other full-flavoured foods; strong cheeses including Parmesan and Pecorino; also suitable as an after-dinner wine.
