Production Details Selected hillside clusters were picked at the end of September or beginning of October and dried on bamboo racks in controlled lofts until the end of January, losing 35% of their original weight. Following soft pressing and partial destalking, fermentation lasted 45 days in large Slavonian-oak barrels or stainless-steel vats at naturally low temperature, then continued for 35 days in 30–40 hl barrels with selected alcohol-resistant yeasts, followed by malolactic fermentation. Maturation lasted 28–30 months: 80% in 40–80 hl Slavonian-oak barrels and 20% in small Allier and Slavonian-oak barrels, the latter comprising 40% new, 30% second-use and 30% third-use vessels. Bottle ageing was a minimum of four months.
