Production Details Pergola-trained hillside vineyards lie at 180–250 metres elevation. Grapes were dried in a fruttaio with approximately 40% weight loss. Pressing occurred in late December, followed by 22–24 days of stainless-steel fermentation with frequent pump-overs. The wine then rested for 5 months in stainless steel, matured for 15 months in wood—half in Slavonian-oak casks and half in second-passage barriques—and received 6 months of bottle maturation before release. Dry extract was 33.6 g/L.
Tasting Notes Deep ruby red; black cherry and violet aromas followed by nuts and toast; full-bodied, with high acidity and a persistent ripe-fruit finish
Food Pairing Amarone risotto, aged cheeses such as Parmigiano Reggiano, and Bistecca alla Fiorentina
