Production Details Hand-harvested Pinot Noir grapes at early stage of maturity from Kondoli Vineyards. Softly destemmed and cooled to 4-6°C with minimal skin contact until desired color and aromatic profile achieved, followed by gentle pneumatic pressing. Cold settled before slow fermentation in stainless steel tanks at 14-16°C. Clarification, stabilization, filtration, and bottling using plant or mineral-based fining agents only, fully compliant with vegan requirements.
