Production Details Frozen Rkatsiteli grapes harvested in early December at -9°C from southern blocks of Kondoli Vineyards and selected old vineyards in Ikalto and Gulgula villages. Water freezes and separates from sugar, flavor and acid components. Hand-harvested early morning in small boxes, hand-sorted, damaged grapes removed, gently crushed in basket press. 2 months fermentation in stainless steel tanks at 16-18°C. Cold storage at 0°C for 6 months. Light filtration, bottling, and 6 months bottle aging.
