Production Details The underripe Sercial is fermented first. Much later, October-harvested Muscat—sun-baked to near caramel—is added to the acidic Sercial wine for a second fermentation. The Muscat's potential alcohol at picking was close to 20%, which is a grape measurement rather than finished-wine alcohol. After blending, the wine ages for between 2 and 10 years in aged Burgundy barrels. It is released in a 50 cl black-glass bottle in an engraved wooden box and should be served slightly chilled in a Port glass.
Tasting Notes Fleshy, rich and amber-coloured; highly complex, combining Muscat sweetness with Sercial acidity and bitterness, followed by candied overripe-fruit characteristics.
Food Pairing Roquefort or other strong blue cheeses; Tarte Tatin; apricot crumble; desserts with candied fruits.
