Production Details Old-vine Sauvignon Blanc was hand-harvested at -6°C on December 14, 2018 after exceptional overripening and frost concentration. Frozen grapes underwent slow pressing for 18 hours; the stated 145 g/L sugar concentration applies to the concentrated extract during pressing, not finished-wine residual sugar. The sheet describes natural alcoholic fermentation at low winter cellar temperatures over several months in dedicated Tronçais oak barrels, followed by 18 months in barrel before bottling on February 10, 2021 and further cellar rest. The release comprises 330 numbered 375 mL bottles. Official serving guidance conflicts: the technical sheet recommends 8–10°C, while the current product page recommends 10–12°C.
Tasting Notes Bright gold and bronze with amber highlights; candied fruit, orange peel, honey, cinnamon, white pepper, ginger, toasted almond and candied citrus; powerful, full-bodied, balanced and sweet, with freshness, mineral tension, subtle spice and exceptional length
Food Pairing Enjoy alone or with mature cheese, refined cuisine or desserts; suggested pairings include pan-seared or semi-cooked foie gras, Fourme d’Ambert and a thin candied-orange tart
