Production Details Simple Guyot pruning; soil ploughing and scraping, shoot removal, disbudding and manual leaf removal. Grapes were harvested entirely by hand and received by gravity without pumps, then pneumatically pressed without must settling. Fermentation used indigenous yeasts, followed by 12 months of maturation in amphora. The sheet states no added sulfur, which does not establish absence of naturally occurring sulfites. Recommended serving temperature is 12–13°C and the stated cellaring horizon is 10 years.
