Production Details The vines are farmed biodynamically and harvested by hand. Fermentation is temperature controlled in large old oak demi-muids and stainless-steel vats; malolactic fermentation is not encouraged, without establishing that none occurred. The wine is aged in large demi-muids. The importer says Moelleux cuvées typically exceed 30 g/L residual sugar, but does not present that threshold as a 2025 finished-wine analysis.
Tasting Notes John Gilman, View from the Cellar: sweet quince, yellow plum, honeycomb, heather, chalk, lanolin, restrained savory notes and fruit blossom; full-bodied, crisp, complex, energetic and precise.
