Production Details The 2025 importer record describes hand harvesting in successive tries, temperature-controlled fermentation in large old oak demi-muids and stainless-steel vats, no encouragement of malolactic fermentation, and maturation in large demi-muids. It says Demi-Sec cuvées traditionally contain approximately 10–20 g/L residual sugar; this qualified range is not an exact finished-wine analysis. The producer's general house method adds 24-hour settling, division between vats and old barrels, and six months' keeping until April bottling.
Tasting Notes John Gilman, View from the Cellar: sweet quince, apple, chalky soil, lanolin, white lilies and an emerging honeycomb note; deep, full-bodied and pure, with zesty acidity, strong lift, grip and a long, precise finish
