Production Details Œnopole's 1.5 L specification: direct pressing; spontaneous indigenous-yeast fermentation in stainless steel; completed malolactic fermentation; 8–10 months on lees in stainless steel; vines aged 25–30 years; organic viticulture; unfined, lightly filtered and given a small SO2 addition at bottling. Tannico's 750 mL listing describes alcoholic and malolactic fermentation in steel, 10 months in steel, and a recommended serving range of 10–12°C.
Tasting Notes Pale golden yellow; white flowers, green apple, white peach and citrus; bright and elegant, with quince, crushed almond, minerality and a savoury finish.
Food Pairing Fish dishes, vegetarian dishes and aubergine parmigiana.
