Production Details Some vines are more than 60 years old; nearby woodland and the open, well-ventilated position influence the site’s microclimate. Vinification and maturation used 10% barrels and 90% stainless-steel tanks over a total period of 22 months, followed by light filtration at bottling. The vintage PDF describes the farming as organic.
Tasting Notes Fresh and spring-like, with water flowers, cucumber, verbena, mint leaf, fresh butter, brioche, hazelnut, white flowers, Granny Smith apple, mandarin, pear and saline notes; bitter-acid entry, white fruit, citrus, dried fruit and a chalky, tonic finish
Food Pairing Seared langoustines; salt-crusted line-caught sea bass with beurre blanc; chicken blanquette with chanterelles
