Production Details Grapes are harvested at full ripeness from ideally exposed slopes. After 24 hours of static settling, fermentation takes place in stainless-steel tanks at a controlled 16–18°C with selected indigenous yeasts; maturation then lasts 6–8 months on fine fermentation lees. Recommended serving temperature is 10–12°C. The exact 2025 e-label calls the wine dry and reports, per 100 mL, 0.8 g carbohydrate and 0.1 g sugars; bottling may occur under a protective atmosphere.
Tasting Notes Pale yellow with green reflections; ripe citrus, mineral and smoky aromas; a fleshy, rounded palate with ripe lemon, blood orange and clementine, followed by flinty tension and a persistent mineral finish with spice and white-pepper notes.
Food Pairing Grilled fish, seafood and fresh cheeses; suggested dishes include seared scallops with sweet-potato purée and fresh goat cheese with herbs, toasted sourdough and fruity olive oil.
