Production Details The biodynamically cultivated, vegetation-covered parcel is planted at 8,300 vines per hectare and harvested by hand. Grapes are collected in small hods, table-sorted, pressed and settled. Fermentation occurs in used barrels and demi-muids without yeast inoculation, chaptalization or acidification. The must is raised reductively on lees for one year without sulfur addition, after which élevage finishes in stainless-steel tank. Polaner reports 24–30 months of extended élevage. Bottling includes a small SO2 addition but no fining or filtration.
Tasting Notes Floral and stone-fruit aromas with a spicy character; supple and harmonious in texture, finishing with an exotic note; dense, powerful and saline.
Food Pairing Grilled squid with poivrade artichokes; root-vegetable tempura with yuzu mayonnaise; thin chard tart with ricotta and lemon zest.
