Production Details The 2016 vintage booklet describes a house process using little SO2, with some residual CO2 possible. After malolactic fermentation, each barrel was tasted several times monthly. Bottling was performed by hand under gravity after a full moon, without fining, filtration or additional sulfur at bottling.
