Production Details The parcel is 0.25 ha and was planted in 1987. Producer-wide 2022 context, not established as Santenots-specific: estate picking ran from 25 to 31 August; sugars among the producer's cuvées clustered around 12.5%, although the measurement basis is not stated; most red cuvées were devatted at about 21 days; and red malolactic completion varied, sometimes extending until summer. Recommended service is 16–18°C. VINORAMA separately characterizes the wine as dry and reports acidity of 5.03 g, but supplies neither a denominator nor an analytical basis, so this is not normalized as total acidity. Honest Grapes markets the exact 2022 as organic and biodynamic, while VINORAMA lists Bio code AT-BIO-301.
Tasting Notes VINORAMA: intense cherry-red color; cherry fruit, fine spice and roast notes, lively acidity, good structure, floral elements, concentrated fruit, and soft tannins. Jasper Morris, tasted October 2023: lively purple color, vivid dark-raspberry fruit, good acidity, and persistence. Allen Meadows/Burghound: layered dark berries, floral and violet notes, mineral-inflected flavors, and a dusty, firm, robust finish.
Food Pairing Red meats and strong cheeses; the supplementary 2022 sheet specifically recommends grilled or roasted veal, braised or stewed beef, and grilled or roasted lamb.
Critics Ratings 91-94/100 — Jasper Morris, Inside Burgundy; 91-94/100 — Allen Meadows, Burghound
