Production Details Hand-harvested. Alcoholic and malolactic fermentations occurred in barrels with natural yeasts. Maturation was divided between 30 hL wooden foudres (50%) and Burgundian barrels, on the lees without racking and with regular bâtonnage. The producer states nine months of maturation in barrels and foudres. The specialist page conflicts internally on the barrel duration—eight months in its specification but nine months in its prose—so no exact barrel-only duration is proposed.
Tasting Notes Clear, bright appearance; fine, taut nose with dried-fruit and roasted notes; full, fleshy palate with marked freshness and a long finish.
Food Pairing Langoustine with herbs
