Production Details The approximately 40-year-old vines yielded less than 20 hL/ha in 2014. After warm pressing without dry ice, sulphur was withheld until after settling. The must fermented naturally in a one-year-old barrel for about three weeks, completed full malolactic fermentation, and remained on its fermentation lees until roughly two weeks before bottling.
Tasting Notes Matt Walls, tasting reported 25 August 2015: restrained pear, quince, celery and honeysuckle aromas; a full, rich palate with butter, honey, hazelnut and fresh orchard fruit; saline, mineral and oak notes on the finish
