Production Details The producing area is stated as 7 ha at 8,000 vines/ha. Grapes are hand harvested and brought whole to the cellar, then approximately 70% destemmed. Fermentation takes place in open vats, with punchdowns and pumpovers twice daily for approximately two to three weeks. The wine matures for one year in 228- and 600-liter oak vessels; malolactic fermentation occurs during winter. It is then racked and bottled in December after the year of maturation.

Production Details The 2023 received a three-day cold soak and was made with 25% whole bunches. It was foot-trodden in open wooden vats at the start of fermentation, then aged in a mixture of demi-muids (60%) and fûts (40%) ranging from new to ten years old.
