Grape Varieties 60% Merlot; 40% Cabernet Franc
Region Saint-Emilion Grand Cru
Soil Limestone plateau, Clay-limestone hillsides, And siliceous soils at the slopes
Harvest Dates Merlot: 7–26 September 2022; Cabernet Franc: 14–26 September 2022
Fermentation Vessels Temperature-controlled stainless-steel tanks for plot-by-plot vinification; malolactic fermentation divided between vats (75%) and barrels (25%)
Production Details The 22-hectare vineyard was planted to 65% Merlot and 35% Cabernet Franc and certified High Environmental Value (HEV). Viticulture included agroecology, single and double Guyot pruning, grass-covered plots, leaf removal and green harvesting; fruit was hand-picked into small crates. Grapes spent 12 hours at 7°C in a cold room before optical sorting. Plot-by-plot vinification used temperature-controlled stainless-steel tanks, cold pre-fermentation and warm post-fermentation, with pumping over and cap-punching. Malolactic fermentation was divided between vats (75%) and barrels (25%); vatting lasted 28–30 days, and one Merlot vat used whole bunches. Maturation lasted 13–15 months in barrels, 60% new, including 500-litre barrels. The analytical section also reports “AT 3.55” but provides neither a unit nor an acid-equivalent basis, so it is not mapped to total_acidity_gl.
