Production Details Alcoholic fermentation uses multiple yeast species. Extraction consists of light pump-overs, two to three rackings and, sometimes, one or two punch-downs. The wine is transferred to new barrels supplied by three coopers; following completion of malolactic fermentation at the end of January, the barrels are moved to the underground quarry cellar for about 20 months before bottling. Final blending takes place at the end of February or beginning of March.
Tasting Notes Deep purple; wild fruit, violet, spice and limestone freshness; balanced attack, velvety tannins and an immense, sculpted finish
