Production Details The 0.35-hectare La Pèlerine parcel was planted at 7,000 vines/ha and Guyot-pruned. No herbicide was used; the vineyard combined grass cover with cultivation beneath the vines and followed an organic approach without insecticide, acaricide or anti-rot treatment. Bud removal, green harvesting and manual harvesting with an initial grape selection preceded rigorous sorting. The crop was not destemmed and underwent cold maceration in a truncated-conical wooden vat, followed by indigenous-yeast fermentation and gentle pump-overs. The wine matured in four used oak barrels and was racked after 18 months without pumping, then bottled without fining or filtration.
