Production Details Approximately two hectares in the Bué terroirs, planted at 7,000–10,000 vines/ha and Guyot-pruned. No herbicide is used; the vines are grassed and the soil beneath them is worked under an organic approach. Bud removal and green harvesting precede manual harvest with an initial grape selection. A sorting table is used and the fruit is 100% destemmed. Cold pre-fermentation is followed by maceration in a truncated wooden vat with indigenous yeasts, gentle punching-down and pumping-over. The wine matures entirely in used barrels for 11–15 months according to tasting, is racked without pumps, and is bottled without fining or filtration.
