Production Details Whole clusters were pressed very slowly pneumatically; after settling, the juice fermented spontaneously. The wine matured for about one year in used demi-muids, received a light sulfur addition only at the end, and was bottled unfined and unfiltered. The supplementary 2022 PDF describes the élevage as exclusively in demi-muids without new wood and places the fully south-facing parcel at approximately 250 m elevation.
Tasting Notes Clear, precise, sensual and gentle; chalk, limestone, yellow plum, starfruit, lemon, green pear and nectarine, developing fruit concentration, stone spice, licorice, light phenolics, floral notes, minerality and a saline finish.
Food Pairing Ceviche, guacamole, sautéed prawns or langoustines, seafood blanquette, saffron squid risotto, Bresse chicken with cream and mushrooms, or sweetbreads with morels.
