Production Details From one 0.5-hectare Sury-en-Vaux parcel; hand harvested and vinified with 25% whole clusters in 2019. Extraction was gentle, with no routine punchdowns beyond generally one operation and daily pumpovers performed without a pump, using a watering can. Maceration lasted approximately three weeks; free-run and press juice were combined, strictly settled and transferred to large-format barrels. No new barrels were used. The specification table says 14 months in large barrels, while the narrative says one year under wood followed by assemblage en masse before December bottling; this duration discrepancy is retained. Sulfur use is reported as 1–2 g at harvest plus a light pre-bottling adjustment, with approximately 35–40 mg/L total SO2 in bottle.
Tasting Notes Fine and delicate, with Morello cherry, sweet spices, a fresh herbal accent, a complex mineral note, an elongated palate, fine-grained tannins and sustained aromatic freshness.
Food Pairing Beef tataki with soy sauce and toasted sesame seeds
