Production Details The producer's current 2024 product copy is internally inconsistent: its introductory description says the handpicked grapes are destemmed, cold-macerated for 10 days, vatted for 12–15 days and naturally vinified in temperature-controlled stainless-steel vats; the linked technical sheet says at least two-thirds of the manually harvested crop is vinified as whole clusters in 45 hL conical wooden vats, with slow pump-over maceration and 8 months of maturation in wooden vats. Vessel, destemming and maceration specifications are therefore not treated as settled canonical facts.
Tasting Notes Dark fruit, spice, subtle tannins; slightly spicy and fruity
Food Pairing Lamb ribs; rabbit with mustard; spicy black cod
