Production Details Gravity-unloaded grapes are sorted without crushing. The juice is clarified using cooling for temperature regulation and undergoes “maceration pulpaire.” Fermentation takes place in stainless-steel vats at 64°F for six to eight weeks. The wine remains on its lees for three to six months with regular agitation and is never placed in wooden barrels.
