Production Details The trade sheet describes 2.14 ha of parcels with vines aged 25–45 years, split between 60% caillottes and 40% Terres Blanches. Grapes were harvested manually, immediately destemmed, and gently pneumatically pressed. A long indigenous-yeast fermentation took place in 600-litre wooden barrels. The wine was then matured on its lees, with 60% in barrel for 12 months and the remainder in steel. The sheet also reports acidity of 3.05 g/L but does not identify the analytical acid-equivalent basis, so that figure is not proposed as canonical total acidity.
Tasting Notes Greenish hue; intense aromas of almond, lychee, elderflower, and citrus; full, rich, and fine palate; long finish retaining freshness, finesse, and minerality
Food Pairing Fish in sauce; oysters; shellfish, including lobster and scallops
