Production Details Grapes are harvested entirely by hand. Maceration and alcoholic fermentation occur in temperature-controlled stainless steel with daily pump-overs and cap immersion; the exact-vintage importer specifies 15 days at no more than 25°C, using remontage and pigeage. Élevage and malolactic fermentation are conducted two-thirds in 600 L demi-muids for 12 months, with stainless steel also used before final barrel/tank blending. The importer describes the demi-muids as oak, says one-third of the barrels are renewed annually, and reports racking, gelatin fining, light filtration, and bottling 12 months after harvest. Recommended serving temperature is 14–16°C.
Tasting Notes Bright, clear garnet-red appearance; cassis, blueberry, cinnamon and pepper initially, opening to sour cherry, cassis and wild strawberry. Direct, concentrated palate with ample refined tannins, blackberry, cranberry, light vanilla and toasted nuances, and a long, dense, precise finish.
Food Pairing Veal, Iberico pork, lamb, poultry and game birds, stews, pasta, vegetable dishes, and mild to piquant cheeses
