Maceration lasts 12 days at 26–32°C with two pump-overs and one punch-down daily. After malolactic fermentation, the wine is matured partly in oak barrels, one-third renewed annually, and partly in stainless-steel tanks. The current French sheet states 10 months, while an official English sheet showing the 2023 bottle states a total of 10–12 months. The technical sheets recommend serving at 14–16°C, while the official 2023 product page instead lists 11–12°C.
Tasting Notes Ruby to deep red; red and black fruits, sour cherry, strawberry, raspberry, blackberry, spice and subtle woody notes; round, juicy and fresh, with a supple texture, discreet astringency and soft, silky tannins.
Food Pairing Braised meats, river fish and cheeses; roast pork with prunes and Tournedos à l'Angevine. The official English sheet additionally suggests Provençal-style grilled ribs and blue-veined cheese.
