Production Details The 1.03-hectare Fontenay parcel was planted in 1970 and was in organic conversion. Grapes are hand harvested at full maturity after berry tasting. After three-hour slow pressing, the must settles at 8°C for three days. Alcoholic fermentation lasts three to four weeks with regular lees stirring: one quarter in temperature-controlled stainless steel and three quarters in 600 L oak barrels used for one to three vintages. The vat portion is first racked 5–15 days after fermentation. The barrel portion matures on total fermentation lees for 10–11 months with bâtonnage until Easter; the stainless-steel portion remains on fine lees until the following Christmas. After bottling, the wine rests for 10 months in the producer's cellars. Recommended serving temperature is 13–14°C.
Tasting Notes Pale gold; fresh citrus, ripe orange and flinty mineral aromas; fresh, full attack; mineral mid-palate with fine, discreet oak tannin; long, fresh finish with caramel and gunflint notes.
