After settling, alcoholic fermentation ran for 30 days at 15–19°C in stainless-steel vats and, for one-third of the wine, 600 L oak barrels. After first racking, the wine matured in vats on fine lees until Christmas and then rested for 7 months before bottling. Recommended service temperature is 12–13°C.
