2016 Technical Specifications

Alcohol 14.0%
Grape Varieties Sauvignon Blanc
Drinking Window 10 years or more after harvest
Region Sancerre
Fermentation Vessels Large upright vats
Indigenous Yeast Yes
Closure Natural Cork
Production Details The importer describes practising-organic vineyard management. Grapes were pressed and the juice transferred to large upright vats for alcoholic fermentation without added yeast. Bottling followed after approximately eight months, with subsequent bottle maturation in the estate cellar. The importer records “Oak aging: No”; this conflicts with estate-wide sources describing vinification and maturation in old neutral wooden barrels or 600-litre foudres. Released in 750 ml and 1,500 ml formats.
Tasting Notes Rebecca Gibb MW, August 2022: dry and steely, firm yet fine, light-bodied but concentrated, with almond, lanolin, lemon tea, bitterness and a strong acidic core.
