Production Details Hand harvested and gently pressed. The producer specification gives 8–12 months in 2,000-L foudres; Caviste's exact-2024 release description specifies 12 months on lees, bottling in December 2025 and certified-organic production. The producer's bilingual sheet is internally inconsistent about vine age: the French text says more than 40 years, while the English text says more than 50; exact-2024 trade sources repeat both thresholds, so no exact vine-age value is proposed.
Tasting Notes Citrus, pervasive flinty minerality, tension, power and crystalline purity, with a long finish
Food Pairing Scallop carpaccio; Loire zander with beurre blanc; mature Crottin de Chavignol
