Production Details Grapes are hand-harvested into 12 kg cases and table-sorted, then hydraulically pressed and fermented in temperature-controlled stainless-steel vats during October and November. The vines are cultivated without herbicides, fertilizers or insecticides. The English section reports six months on lees but enumerates only December, January and February; it reports racking in March and 50% bottling during April–June. The French section instead places racking, fining and light filtration in April. The producer recommends serving the wine at 10–13°C.
Tasting Notes Pale gold with green hints; expressive and intense, with boxwood, rhubarb, blackcurrant and kiwi aromas plus a light marigold-like vegetal note; soft, round entry, bright freshness, lively purity, balance and a clean lingering finish
Food Pairing As a young wine: aperitif and shellfish. With further maturation: oriental dishes, sushi, grilled fish, fish with sauce, roasted white meats and poultry.
