Production Details Certified organic. Hand-harvested fruit underwent 48 hours of lees settling, followed by indigenous-yeast fermentation in French oak barrels, 20% new. Maturation comprised 12 months in barrel followed by six months in tank; the wine was bottled unfined and unfiltered, and all cellar actions followed the lunar calendar.
Tasting Notes North Berkeley Imports: white peach, citrus zest and chalk aromas, with lemon, quince and white pepper on a supple, juicy palate. Wine Advocate, as quoted by SAQ for 2021: crisp pear, yellow apple, peach and nutmeg; fleshy and saline.
Food Pairing Sushi; white fish with citrus; roasted chicken.
